It’s rare that I figure out a combination that’s so addictive that it tastes great on everything. But in my effort to make a last-minute dip yesterday for the 4th, I created what I feel is the best and most universal dip ever. It’s rich, tangy, and creamy, with a bit of bite—the best addition or topping for burgers, dogs, chicken, veggies, or just slathered on some chips. I am really not kidding when I say use this on everything. Just keep a quart in your cooler at all times, and you will be thanking me all summer.
The key here is the Irish cheddar; however, if you can’t find this, use any sharp cheese that suits your fancy.
Ingredients:
2 cups mayonnaise
2 cups sour cream
2 cups cream cheese
1 Tablespoon prepared horseradish
1/4 cup Worcestershire sauce
2 tablespoons freshly chopped thyme
1 each 7 oz block of Dubliner Irish Cheddar cheese (grate it with a microplane if possible)
2 red bell pepper diced fine
1 rib of celery diced fine
1 tablespoon honey
6 tablespoons nutritional yeast (omit if you can’t find any)
2 tablespoons salt
1/2 cup Frank’s Red Hot
3 tablespoons freshly chopped chives
6 whole garlic cloves chopped fine
Instructions:
Combine the ingredients in a bowl. Smash the cream cheese along the side of the bowl with a rubber spatula as you are mixing. yOu can allow some of the chunks of cream cheese to remain. Serve asap or save for the week.
I made this. Took over an hour to do all the prep and mixing. Very good taste. I tried adding some dill and I liked that. Some people thought it was a spicy Thousand Island sauce. I guess I could add pickle relish. It is good on everything.
A variation of Low Country Cheddar Pimento spread!!! Bet it’s great on a grilled cheese sammy!!! ❤️
