I wanted to put together a simple rub for steaks, chicken, lamb, and even veggies now that it’s grilling season. DON’T spend $10 on a stale prepackaged branded rub when you can make your own at home for pennies.
This recipe is simple and versatile. If you want to make it spicier, add some cayenne or chipotle powder; if you want more aromatic, increase the garlic and onion powder. Have fun with it.
For this test, I used two flat iron steaks. I toss them with a touch of salt, then cover them with the rub. I allow them to sit for about 5-10 minutes, then place on a sheet pan and bake in a 375F oven for 8-10 minutes. At this point, I pull them from the oven, drizzle with melted butter or avocado oil, and grill on both sides. Let it rest, and slice the meat. You won’t be disappointed. Ingredients:
2 tablespoons smoked paprika
2 tablespoons paprika
2 tablespoons garlic powder
2 tablespoons onion powder
1 tablespoon ground coriander
2 tablespoons brown sugar
1 tablespoon ground mustard
1 teaspoon dried (and crushed) oregano
1 teaspoon mushroom/umami powder (optional - trader joes makes a great one)
