This is a great recipe to elevate your holiday roast. After you roast the meat, while it is resting, smother it all over the meat and allow it to soak into the exterior. Drizzle the butter and drippings all over the meat after slicing as well and add some more dollops as you see fit.
1/4 cup cooked bacon chopped (save the fat when cooking)
1 clove garlic minced
1 teaspoon minced fresh herbs (I recommend tarragon but thyme, sage, chives, oregano, and parsley will all work)
1 shallot finely chopped
3 tablespoons prepared horseradish
1 cup unsalted butter softened at room temp
2 Tablespoon Dijon mustard
1 teaspoon bacon fat if saved
1 teaspoon Worcestershire sauce
1 lemon juiced and zested
1 tablespoon mayo
Combine all of the ingredients at room temp. Smother all over your roast after you pull from the oven and then before serving, smother again on the slices.
