This is a wonderful alternative to the basic hot dog (or bacon wrapped hot dog). If you don’t like, or can’t find, lobster, you can just use the shrimp or fold in another protein (smoked salmon, chopped chicken, pulled meat)
What you will need:
Food Processor
Plastic wrap
Baking pan
Recipe:
1 lb headless peeled and deveined shell-off, tail-off shrimp (26/30 is fine)
1 egg
1 tablespoon heavy cream
2 tablespoon panko bread crumb
1 lb lobster meat (or crab meat)
1 lemon
To finish
1 cup flour (seasoned with salt and pepper)
1 egg beaten
2 cups Panko bread crumbs
Frying fat and bacon strips
For the relish:
2 medium cucumbers, seeded and finely chopped
1 red bell pepper finely chopped
1 medium onion, finely chopped
1/2 cup sherry vinegar
1/4 cup honey
1/2 teaspoon celery seed
1/4 teaspoon mustard seeds
1/4 teaspoon dijon
1/2 cup olive oil
For the sauce:
1 cup avocado oil mayo
1 tablespoon gochujang
1/4 cup lemon juice
1 tablespoon honey
1 teaspoon siracha
1 tablespoon buttermilk
Steps:
Thaw the shrimp and blend in a food processor with the heavy cream and egg. Use a spatula to transfer it into a bowl. (If you don’t have a processor just chop the shrimp on a large cutting board until fine and fold in the egg and cream).Â
Fold in the lobster meat, lemon juice from 1 lemon, and lemon zest from the outside.Â
Line your counter with a small piece of plastic wrap. With a small spoon, scoop 4 tablespoons of the mix on the wrap then roll it up in the wrap and tighten the end. Make it the shape of a hot dog.
Repeat this process with the mix and place it on a sheet pan.Â
Pour a small amount of water on the sheet pan to create steam, then bake in a 350F oven for 10 minutes.Â
Remove and allow to cool.Â
Once cool, remove from plastic wrap, wrap in bacon (hold together with a toothpick)Â
Fill a frying pan with 3 cups of pure olive oil, ghee, beef tallow or bacon fat.Â
Fry the dogs until they are crispy - you can finish in the oven if you prefer.
Pack the dogs into a bun and top with the relish.
The panko is to bind the filling.
