This is the perfect Superbowl (party) appetizer. Even if you don’t want to use shrimp, you can apply the same technique to another protein. The key is par-cooking the bacon first, tightly wrapping around the protein, and then pan-searing to finish. Too often people wrap the protein with raw bacon and it ends up gummy with the protein overcooked.
The sauce is also versatile and I suggest having this recipe on hand at all times for any necessary basting or finishing.
Ingredients:
8-10 each 13-15 shrimp tail on shell off, or easy peel. You can also use another sized shrimp, however, the larger the better the presentation.
8-10 pieces of center-cut bacon
Fresh black pepper as needed
For The Sauce:
1 cup ketchup
1/2 cup cider or white vinegar
3 tablespoon honey
2 teaspoon coriander
1 tablespoon garlic powder
1 teaspoon onion powder
2 tablespoon Worcestershire sauce
1 teaspoon fresh thyme chopped
1 tablespoon soy sauce
Steps:
Par cook your bacon in the oven for 8 minutes. You want it partially cooked but still pliable.
Peel your shrimp if needed otherwise make sure it is thawed and dry.
Pull the bacon and when it has cooled, wrap the shrimp tightly in the bacon. You can also use a toothpick to hold it, but if you let it sit after wrapping, the bacon fat will cool and hold it together as you sear the shrimp.
Get a non-stick saute pan hot (you can also grill these) then pan-sear the bacon-wrapped shrimp. You won’t need any fat as the bacon fat will lubricate the shrimp through the cooking process.
While the bacon or shrimp is cooking, add your sauce ingredients to the sauce pot and simmer for 5 minutes until it all comes together. Drizzle this sauce over the shrimp.
