Have some leftover chicken? Try these quick and simple chicken-bacon deviled eggs. I bet you can’t eat just one. I’d suggest these are better than a protein bar with as much nutrition without the fillers.
I made some of these a few months back and now the kids request them daily. The amount they eat scares me (and our plumbing system). If you can find cooked and smoked chicken that’s a great way to amp this up (Trader Joe’s has a good one), but regular chicken will do just fine.
Ingredients:
12 hard-cooked eggs (slice in half and remove the yolks from the whites)
4 tablespoon mayo
3 tablespoon buttermilk
1 tablespoon sour cream
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 cup chopped chicken
1 lemon zested and juiced
1 tablespoon nutritional yeast
1 teaspoon freshly chopped chives
salt and pepper to taste
5 slices of bacon roughly chopped
Steps:
Combine the egg yolks with the remaining ingredients except the bacon. Mix with a fork or a whisk. If you like your devilled eggs less stiff, add more buttermilk.
Scoop a large tablespoon of the filling into each egg white half. Garnish with some chopped bacon, fresh chives and a sprinkle of salt.
SERVE AND ENJOY!
