This is my go-to breakfast recipe for Sunday mornings. I love french toast, but it tends to become quite soggy. I used to make cornflake-crusted french toast, but after having kids, I wanted to prepare something they could easily eat with their hands. That's when I came up with the idea of making crispy French Toast Sticks. Although you will probably want to use a knife and fork, these sticks are perfect for eating on the go.
Ingredients:
1 loaf of uncut challah, brioche or white bread. If you can’t find an uncut loaf just use texas toast.
2 cups of premade pancake batter (you can use the packaged stuff for this one)
2 eggs
1 tablespoon cinnamon
1 teaspoon honey
4 cups crushed corn-flakes
3 tablespoon butter (more as needed)
Maple syrup mixed with a touch of vanilla for the finish.
Cut the bread into large sticks or logs. Whisk the honey, eggs and cinnamon with your pancake batter. You can make the batter a bit thinner than usual. Soak the bread in the egg mixture (you can do this in batches if needed), then roll in the crusted corn flakes.
Heat a non-stick skillet or electric countertop griddle and melt the butter. Do not burn or brown the butter. Cook the toast sticks in the butter on all sides until they lightly brown.Â
Serve with vanilla syrup and powdered sugar.Â
i made these yesterday—and used frosted flakes because it was all i had in the pantry. yum!
