Crunchy Salmon “Tenders” with Yogurt-Lime Sauce
Perfect gateway dish for kids or adults apprehensive of seafood
Crunchy Salmon “Tenders” with Yogurt-Lime Sauce
Serves 2-4
10-12 oz verlasso salmon filets (skinless)
4 tablespoon honey
1 tablespoon dijon mustard
2 teaspoon water
1 cup kettle cooked potato chips (packed into a cup loosely, broken is ok)
1 teaspoon fresh thyme (chopped)
1 teaspoon chives (thinly chopped)
½ cup plain yogurt
1 lime, juiced
½ tablespoon sugar
½ teaspoon paprika
⅓ teaspoon dried oregano
Directions:
Cut salmon into strips or nuggets (whichever you prefer).
Crush potato chips in a plastic baggie until they are in small pieces, mix in chives and thyme.
Whisk together honey, water and mustard.
Toss all of the salmon pieces in the mustard mixture.
After they are soaked in the mustard mixture, roll the salmon pieces in the potato chip mixture.
Line salmon pieces on sheet pans. Bake in 350 F oven for 12 minutes.
Mix together yogurt, sugar, paprika, oregano, and lime juice.
Serve hot with the yogurt mix as a dipping sauce.
