Green Goddess dressing is a creamy and herby dressing or condiment that is typically made with mayonnaise, sour cream, anchovies, parsley, tarragon, chives, lemon juice, and vinegar. It has a vibrant green color and a fresh, tangy flavor. In this recipe I removed the anchovies and added Worcestershire sauce for a deep umami feel without the fish-like finish.
This is the most versatile condiment/dressing that can be used on pretty much anything. Many places use this as a dip for fresh or grilled veggies, meats and poultry, however, I also enjoy this as a sandwich sauce or salad dressing.
The tarragon is the base of the flavor and can be somewhat strong if you don’t like tarragon. Feel free to sub the tarragon with more parsley and a tablespoon of fresh thyme or oregano if you don’t love tarragon.
Ingredients:
2 cups mayo
1 cup sour cream (you can sub with yogurt if you’d like)
4 tablespoons minced tarragon
2 tablespoons minced parsley
2 tablespoons chopped chives
2 tablespoons minced garlic
1 tablespoon Worcestershire sauce
1 lemon zested and juiced
1 tablespoon red wine vinegar
1 tablespoon harissa (or your favorite hot sauce)
2 tablespoons minced shallot
2 tablespoons extra virgin olive oil
Salt and freshly cracked black pepper to taste
Instructions:
Add your ingredients except the mayo, sour cream and olive oil into a bowl and combine. Transfer this mixture into a blender and puree drizzling in the olive oil. It will have a pesto like consistency. Then add your mayo and sour cream and continue to blend until fully mixed. Taste for seasonings then enjoy!
