This recipe is actually quite simple; you will just need a food processor or some serious chopping skills and time.  It entails chopping/blending shrimp, folding in lobster and egg, then forming this mix into “wing” like shapes - from there you poach, then triple bread and fry the wings - toss in buffalo sauce to finish. 

What you will need:

Food Processor

Plastic wrap

Baking pan

Recipe:

1 lb headless peeled and deveined shell-off, tail-off shrimp (26/30 is fine)

1 egg

1 tablespoon heavy cream

2 tablespoon panko bread crumb

1 lb lobster meat (or crab meat)

1 lemon

To finish

1 cup flour (seasoned with salt and pepper)

1 egg beaten

2 cups Panko bread crumbs

Frying fat and buffalo sauce

Steps:

  1. Thaw the shrimp and blend in a food processor with the heavy cream and egg. Use a spatula to transfer it into a bowl. (If you don’t have a processor just chop the shrimp on a large cutting board until fine and fold in the egg and cream). 

  1. Fold in the lobster meat, lemon juice from 1 lemon, and lemon zest from the outside. 

  1. Line your counter with a small piece of plastic wrap. With a small spoon, scoop 2 tablespoons of the mix on the wrap then roll it up in the wrap and tighten the end. Press it down so it looks like a flat wing. 

  1. Repeat this process with the mix and place it on a sheet pan. 

  1. Pour a small amount of water on the sheet pan to create steam, then bake in a 350F oven for 10 minutes. 

  1. Remove and allow to cool. 

  1. Once cool, remove from plastic wrap and dust in flour, then the egg mixture, then the panko. 

  1. Fill a frying pan with 3 cups of pure olive oil, ghee, beef tallow or bacon fat. 

  1. Fry the wings until they are golden brown then toss with your favorite wing sauce.

What would you think about using canned Salmon (instead of lobster or crab)?
