Someone asked me how to sear scallops properly, so I wanted to share this quick video here with my Sustack subscribers.
The approach to searing scallops is simple. You must make sure the scallops are super dry.
Get your pan blazing hot, and then add your oil. Make sure it’s not smoking then add your scallops to the pan. Don’t move them around at this point and ensure you don’t over crowd the pan. Cook them about 60% through on one side, then once they are golden brown and delicious, flip them over and cook for a bit more finishing with whole butter.
It’s that simple!
