Roasted Pepper Vinaigrette
The perfect condiment/sauce/dressing/blanket for meat, chicken, veggies
Our fridge is full of sauces - vinaigrettes, dips, spreads - small amounts of various concoctions that get used on everything we eat, from chilled sliced beef tenderloin to layered (mile-high) sandwiches.
As I mentioned in my kick-off post, Sauce is Boss. When it comes to high-quality steak, however, I am typically a purist - usually finishing it with nothing more than some herbs, sea salt, and vinegar. I do have a soft spot though for vinaigrettes. I love the emulsion between a nice high-quality vinegar, punchy mustard, and smooth olive oil - throw in some roasted sweet peppers and this is the perfect everyday meat (or veggie) dressing.
Side Note: This is amazing on hot fries too.
For the Dressing:
¼ cup red wine vinegar
¾ cup extra virgin olive oil
1 tablespoon dijon mustard
¼ cup roasted red peppers (jarred or canned is fine)
1 tablespoon honey
1 teaspoon granulated garlic
1 tablespoon nutritional yeast
Put all of the ingredients in a container and shake until fully combined.
