Seafood (Lobster/Shrimp) Pie
Excellent for a date night or with the kids (or a date that leads to kids).
Grilled Seafood Pie
Serves 4
Note:
This is a very hands-on recipe - crushing the chips, mashing the potatoes, grilling the seafood, flaking the fish, and putting into the pie - as a result, it’s fun for everyone.
Use this recipe as a foundation upon which you can build your favorite flavors. If you want corn and peppers in the pie, add those; or if you prefer a more southwestern spin, add salsa and tortilla strips to the top.
Make Ahead
-Potatoes
2 lb yellow potatoes
2 Tablespoon butter
2 Tablespoons shredded cheddar cheese
¼ cup heavy cream
2 eggs
Seafood Marinade
1 lb favorite fish or shellfish
1 Tablespoon fresh lime juice
2 Tablespoon Ketchup
1 teaspoon white vinegar
1 teaspoon molasses
1 teaspoon sugar
1 Tablespoon olive oil
Pie Filling
1 cup peas
1 carrot peeled and diced
Any other friendly veggies
Garnish
1 cup shredded cheddar
1 cup crushed Corn Chips (or your favorite chips)
Prepare Ahead:
Boil the potatoes with the skin on. When they are fork-tender, remove from water and mix in a bowl with the remaining ingredients. Set aside or place in the fridge. This will be the pie topping.
For the Fish:
Rinse seafood and pat dry. Mix the ingredients for the marinade in a large bowl or glass dish. Allow fish to sit in this mixture for at least 2 minutes.
Line a pre-heated grill with aluminum foil and poke holes in the foil. Brush with oil and place fish on the grill. Grill over medium heat until finished (about 5-7 minutes).
To Build:
In a glass baking dish or pie dish, mix together the grilled fish (you can flake apart), and veggies. Place on the bottom of the dish.
Top with large spoonfuls of the mashed potato topping and spread evenly over the fish mixture.
Bake in the oven for 12-15 minutes at 350F until the topping in golden brown.
Serve alongside a chilled crisp salad.

It sounds good, but the picture looks like a traditional pot pie crust on top cooked in a cast iron skillet. Is there a picture with the mashed potato and corn chip topping?
