INGREDIENTS:
2 small serrano peppers sliced and seeded (raw or gently roasted)
1 teaspoon minced shallots
1/2 cup sherry vinegar or white balsamic
1 teaspoon Dijon mustard
1 tablespoon maple syrup or honey
1 1/2 cup extra virgin olive oil
1/2 teaspoon ground coriander
1/2 teaspoon kosher or sea salt
If you don’t have a blender, you can shop all of the ingredients very fine and let them sit in a bowl before adding the oil. Allow the ingredients to marinate for about 20 minutes - then slowly whisk the olive oil in or put all of the ingredients in a jar or Tupperware container and shake vigorously for 30 seconds.
If you have a blender, add all of the ingredients except the oil, blend on high until combined, then slowly drizzle in the olive oil with the motor running until thoroughly combined.
