Everyone has their way of cooking eggs, but in my opinion, soft-boiled is the best. Nothing better than spreading some hot yolk across a piece of rustic, freshly toasted bread.
This recipe is simple enough, all you need is eggs, heat, and water. If you like your eggs a bit “harder” extend the cooking time from 3 minutes to 4 or 5.
Also, while some people advocate using older eggs for hard-boiled eggs (As that makes them easier to peel); I prefer the freshest eggs possible for soft-boiled.
My favorite seasoning is a take on the everything bagel spice (recipe below).

Add your eggs to a sauce pot and cover with cold water.
Place on a stove and bring to a boil.
Once the water begins to boil, turn the heat off and cover your egg pot (with a tight-fitting lid or aluminum foil) for 3 minutes
At this point, remove your eggs and place them in a bowl of ice water until they are cool enough to peel.
Slice and top with special seasoning.
Seasoning recipe:
1 tablespoon flakey sea salt
1 tablespoon toasted black sesame
1 tablespoon toasted white sesame
1 teaspoon crushed seaweed
1 teaspoon minced toasted garlic
1 teaspoon minced toasted onion
1 dash paprika
