Brain food for Lunch
It’s no secret that seafood is healthy for the brain, especially after a holiday of rib roasts and champagne.
A new study by UCLA researchers shows that a diet lacking in omega-3 fatty acids, which are commonly found in fish, may cause your brain to age faster and lose some of its memory and thinking capabilities. The research demonstrated that people with lower levels of omega-3 fatty acids have lower brain volumes — equivalent to approximately two years of structural brain aging.
Skip the processed deli meat and hit the seafood for flavor, brain power and sophistication.

p ways to make your lunch bag smarter.

Pantry:
Smoked Salmon
Smoked Trout
Wild Pacific Albacore Tuna (either Wild Planet canned tuna or American Tuna)
Canned Sardines in Tomato Sauce
Nicoise Baguette
1 each 6 inch long baguette
Sandwich toolkit
2-3 oz any seafood from Pantry above
5 chopped black olives
2 hard boiled eggs sliced/chopped
5 green beans (microwaved for 20 seconds and chilled)
Combine for the sauce
1 lemon, juiced and zested
1 tablespoon mayo
1 teaspoon dijon mustard
handful of arugula or bibb lettuce
1 roma tomato sliced
To Build:
1. Toss all the ingredients in the sandwich toolkit gently together in a bowl.
2. Cut the baguette halfway open like a clam shell.
3. Drizzle the sauce all over the inside of the baguette.
4. Pack the sandwich toolkit into the center of the baguette.
5. Top with the sliced tomato and arugula.
6. Wrap gently with wax paper and close with a rubber band.
7. Throw into a lunchbag.
Smoked Salmon/Trout BLT
2 slices thick cut (ideally hand cut) sourdough
Sandwich toolkit
2-3 oz smoked salmon, trout, or any other smoked fish
5 pieces iceburg lettuce (travels best in a lunch bag)
1 vine ripe tomato sliced
½ ripe avocado sliced or smashed
1 tablespoon olive oil
1 teaspoon lime juice
5 pieces of crispy cooked bacon
To Build:
1. Smash avocado with olive oil and lime juice.
2. Spread avocado mix onto sourdough.
3. Pack the rest of the sandwich toolkit onto the bread.

Let’s say I bought a $70.00 cookbook and this mediocre “recipe” appeared as well as the last two “recipes”, I would return the cookbook immediately. This small showing of low level content is a disgrace. I demand a refund,! This is unacceptable.
