Every time I post a picture of a burger with lettuce and tomato I get trolled to the max. It always puts me in a tough spot because I want that refreshing bite from burger toppings - they typically cut through the richness of the meat and all a layer of texture - but I can also empathize with the idea they are, at times, gratuitous.
I decided to create a relish that can bring together the best of both sides - it’s punchy, acidic, tart, salty, and satisfying without the height and excess you get from layers of lettuce, tomato and onion.
Recipe (this makes extra, so use on any protein,salad, or as a dip):
3 tablespoon red pepper diced
3 tablespoon green pepper diced
3 tablespoon diced dill pickles
2 tablespoon diced cucumber
2 tablespoon diced red onion
1 teaspoon fresh dill chopped
1 tablespoon Italian flat leaf parsley chopped
2 garlic cloves minced
1 tablespoon furikake with sesame seed
1 tablespoon cider vinegar
1 tablespoon extra virgin olive oil
1 teaspoon Dijon mustard
1/2 teaspoon red pepper flake
1 teaspoon honey
1 lemon zested and juiced
1 tablespoon bacon fat (optional)
COMBINE!
