Persillade is a classic French sauce/condiment that consists of chopped fresh herbs (typically parsley), garlic, olive oil, and vinegar. Some variations include additions such as chopped capers, anchovy, and citrus to name a few. It is very similar to chimichurri, pesto, and gremolata. Like these other variations, persillade packs the perfect punch of salt and acidity to a plethora of dishes ranging from potatoes to fish and everything in between.
