One cool gift that doesn’t break the bank and is one-of-a-kind (aka, you can’t find it anywhere) is your own spice blend.
Recently, I have been diving into the world of umami (the fifth flavor profile) to try and come up with an easy seasoning that isn’t packed and full of MSG to achieve that level of flavor. Enter the umami spice blend. I use shiitake mushroom as the base, garlic powder, good salt, and a handful of other seasonings. This is the ultimate recipe, perfect for beef, chicken, veggies or even on a salad.
Give it a go and enjoy!
Recipe:
8 oz dried shiitake mushroom (blended into a powder in a coffee grinder)
1/4 cup granulated garlic
1/2 teaspoon freshly ground coriander
1/4 cup Himalayan pink salt
1 teaspoon smoked paprika
1/2 teaspoon dried ancho chili powder
1/2 teaspoon wild fennel (ground fennel seed works too)
1/2 teaspoon aleppo chili pepper (ground if possible - see video)
1/2 teaspoon oregano (ground if possible - see video)
1/2 tablespoon ground pepper melange (white, black, green, pink)
No anchovies!!??
Thank you Mr. Gruel for the spice blend - be nice to subscribe, after the first of the year methinks. In the meantime happy holidays.
