I began dicing onion like this a few years ago. Some chefs would not like it, but it was more efficient and more cost effective.

Tried this last night when I diced an onion for a chicken pot pie. Love it! Like you described, I would just willie nillie chop up the butt end. Thanks - the one thing I need to get better with is my knife skills.
