Grilled meatballs are the best summer dish. They take burgers to a whole new level. I make these in slider form, so they still have the meatball shape; however, if you want to get silly, you can make them into burger patties as well.

Ingredients:
1/2 lb bacon diced
1 onion diced
4 large cloves garlic minced
1.5 lbs 80/20 ground beef
1/2 cup red wine
2 each 8 oz can of organic tomato sauce
1 tablespoon dried Aleppo pepper
1 tablespoon fresh basil chopped
1 egg
1 cup panko bread crumb
1 tablespoon Worcestershire sauce
2 tablespoon kosher salt
1 teaspoon fresh cracked black pepper
1/2 cup freshly grated parmesan
10 slider buns
1 log of fresh mozzarella cheese
1 teaspoon freshly chopped chives
Steps:
Render the bacon in a pan over medium heat for 5 minutes. Add the onions and saute for another 3-4 minutes. Add the garlic and cook for another minute. Deglaze with the red wine. Reduce the wine for about 1 minute, then add your tomato sauce and simmer for 2-3 minutes. Set aside
Combine the meat with the remaining ingredients. When the sauce is slightly cooled, mix in about 1/4 of the bacon/onion/tomato sauce into the meat mixture. Form the balls and cook in the remaining tomato sauce until they are set on the outside. At this point, remove them from the heat and bring them to the grill.
Grill the meatballs over high heat until caramelized all over. Add the cheese on top and melt while still on the grill. Place on the slider buns and enjoy.
Love this. Sliders are an under appreciated format for grilled meat, and IMHO offer the perfect meat to bun ratio.
A little pesto on the bun here wouldn't suck either...
