This dish is not just easy to make, but it tastes even better after a day in the fridge (if you can wait that long). So go ahead and make a double recipe.
The key here is the simple vinaigrette and the use of citrus to add a ton of pop. If you want to improvise, you can substitute the lemon juice with another citrus fruit or vinegar like champagne vinegar, orange juice, lime juice, or even fresh pineapple.
For The Dressing:
1 teaspoon Dijon mustard
4 Tablespoon Extra Virgin Olive Oil
1 clove garlic minced
1 lemon juiced and zested
1 Tablespoon white wine vinegar
1 teaspoon dried oregano
salt and pepper to taste
Instructions: whisk in a bowl or shake together in a jar with a lid
For The Salad:
2 cans of chickpeas drained and rinsed (15 oz cans)
1 pint grape tomatoes cut in half
1 English cucumber sliced in half lengthwise and cut into half moons
1 small yellow bell pepper cleaned and diced
1/2 cup red onion thinly sliced
1/4 cup Italian Parsley rough chopped
12 fresh mint leaves chopped
2 Tablespoon sliced Kalamatha olives
Instructions: place all of the veggies in the bowl, lightly salt and allow to rest for 10-20 minutes. Drain any liquid that is released then pour the dressing over the salad. Taste for salt and add more if needed, however, the initial salt/purge will season the veggies.









NOTES:
If you aren’t a fan of chickpeas, a great alternative is cooked bow-tie noodles
Feel free to add any of the following ingredients as you like:
-Feta Cheese
-Pepperoncinis
-Capers
-Baby Spinach
-Shaved Carrots
-Grated Green Zucchini
-Grilled Chicken
I make almost this same salad, but I use cous cous in lieu of garbanzo beans. I will definitely try this version!
