I got home late last night and didn’t have time to go to the store. I needed to cook dinner for the kids. Luckily I had some hot dogs, but as any parent knows, they need a vegetable with their dinner!
While veggies are never “center plate” I always put extra effort into making our veggies crave-worthy so the kids don’t forever hate them. I had 1 head of broccoli in the fridge, about 7 carrots, and some white miso. That’s how these miso-glazed carrots and broccoli were born.
The key here is to caramelize your carrots for added sweetness lightly, then simmer them in the miso broth. I only add the broccoli at the end to steam, then finish with whole butter and some nutritional yeast. It’s that simple. And as an added benefit, the kids love peeling the carrots. Bingo, free labor.
Ingredients:
7 medium-sized carrots
1 tablespoon olive or avocado oil
1 small head of broccoli (broken down into florets)
8 tablespoons white miso
1-quart water
3 tablespoons whole butter
1 tablespoon nutritional yeast
Toasted white sesame seeds (optional garnish)
salt and pepper to taste
Instructions:
Cut your carrots into slices or oblique cuts (on the diagonal). Add your oil to a medium-sized saute pan. Add the carrots and cook for about 10-15 minutes over medium heat until lightly caramelized.
While the carrots are cooking, mix the miso and warm water in a small bowl or container. Pour into the carrot mixture and cook for about 5 minutes. Place the broccoli atop the carrots and cover with a lid. Allow to steam over low heat for about 5 minutes (longer if you like your broccoli cooked well).
Remove the lid, turn off the heat, and mix your butter into the pan. Swirl together until it is all combined. Season with salt, pepper and nutritional yeast and place in a bowl to enjoy.
Made this tonight and it was a BIG hit! First time cooking with miso paste and certainly won’t be my last!
