No you can leave on there. After you sear the pork (and before you saute the veggies) you can skim or pour some of the rendered fat out of the pan if it's a lot.

I make Cuban Pork w/Mojo and the whole thing. Made it for year. But I love a little spice and can't wait to try this.

Andrew, in the steps, I think you forgot to tell people to add the fire-roasted tomatoes with the chicken stock and pork. Can't wait to try this!
