Chef, I have a couple questions...first, I’ve never salted meat before....how much? How long? And do you rinse the meat before cooking? Also, the application of the marinade after the meat has gone thru it’s first cooking but before it goes thru it’s second cooking seems more like a flavor enhancement that a marinade.
