Sweet and Sour Carrot Slaw
Inexpensive, simple, long-lasting and amazing as a main, side or condiment
This quick and easy “slaw” is a game-changer. It will make any dish or salad go from basic to over-the-top. I like to add this to my sandwiches, my grilled meats, or even eat solo on-the-go.
You can also use this as a base upon which to build other flavors. For example, if you like it spicy, add jalapenos or hot peppers; if you want more veggies, mix them in. If you don’t like carrots, use cucumbers.
The key is salting the veggies for an hour so they purge some of their liquid, then the salt takes over. You will replace those “cells” with our flavorful dressing. It’s that simple.
RECIPE:
1 lb fresh organic carrots, peeled and hand grated
1/2 cup red onion thinly sliced
1 Tablespoon fresh thyme minced
1 cup thinly sliced red cabbage
2 Tablespoon kosher salt
FOR THE DRESSING:
1 cup sherry vinegar
2 tablespoon olive oil
2 Tablespoon honey
1 Tablespoon dijon mustard
Toss the carrot, thyme, onion, cabbage, and salt and allow to sit and “sweat” for 2 hours. Drain any liquid that is released. Then toss in the dressing and put in the fridge to marinate.

Where do you buy Sherry Vinegar? (I can not find it at grocery store or liquor store.)
