Oh my gosh…AMAZING! I only used 1 big jalapeño, and baked these in my mini muffin Sil Pat pan. Made a big pot of easy chile to justify eating large quantities of this wonderful corn bread. Thank you, Chef!!
Happy to have these recipes from Chef Andrew but don't do what I did and add the half stick of melted butter to the pan, as the original directions had. Also, no instructions on what to do with the 2 TBSP of honey. Add it to the sweet potato mixture mixture, I guess.
So I have a question about using Keller's Cup4Cup - would it work with the AP Cup4Cup or should I use the Ancient Grains? Or any other suggestions to make it GF? I've had a lot of luck with the C4C AP but I know that a lot of his baking recipes use the Ancient Grains. . . .what say you?

Use the honey at the end as a drizzle. The butter melted goes in with the wet ingredients. Thank you!

For a gluten free option what would you replace the wheat flour with? Almond, rice….? Unfortunately I have an allergy.
I would do almond flour and increase the baking powder by 1 teaspoon to lighten it.
When is the 1/2 cup melted butter added?
